Nonna Rosaria left Cetara — a fishing village clinging to the Amalfi Coast — with a suitcase, a mortar for pounding basil, and one rule she never broke: buy what the sea gave you that day, or don't cook it at all.
Three decades later her grandchildren still run the pass. The catch arrives whole each dawn from the lakes and the coast, filleted where you can watch. The pasta is rolled, cut, and dried on wooden dowels before the doors open — flour on the counter, semolina underfoot.
We don't own a freezer. We never have. If the branzino sells out, it sells out — and tomorrow we begin again, exactly as Rosaria did, facing the water.
