Mughlai cooking was never everyday food. It was created for the royal kitchens of an empire — where masters of spice, fire and patience competed to set a table worthy of an emperor. Whole almonds ground to silk, saffron measured like treasure, meats marinated for a day and sealed to cook in their own steam.
At Darbar we keep that discipline alive. Our dum dishes are sealed under bread and cooked low for hours, so the aromatics never escape. Our tandoor roars from dusk, charring kebabs and breads to order. Nothing is rushed, and nothing is ordinary.

Our clay tandoor is lit at dusk and stoked past 480°C — hot enough to blister a naan in ninety seconds and seal a kebab's crust while it stays velvet within. It is the oldest tool in our kitchen and the one everything answers to.
The chef works it by hand and by feel: skewers lowered on long steel, breads slapped to the clay wall, the whole line moving to the rhythm of the fire. Nothing off the tandoor waits — it travels from coal to table in minutes, which is exactly how it should be eaten.
